Vegetable clear soup
I was getting several requests for a healthy soup recipe and also for some weight-loss recipes. Well, clear soup recipe is in ideal recipe for weight watchers. As this soup recipe is completely loaded with vegetables which are high in fibre and almost no fat (minus noodles). Moreover, veg clear soup are very filling too and can be easily served as a snack, meal or even for appetizer. In addition, vegetable clear soup is ideal for common cold problems or for indigestion. I personally prepare this almost thrice a week. Also, this soup recipe is a perfect recipe when served warm or hot during winter or for cold climate regions like ours.
Vegetable Clear Soup
Ingredients
2 tbsp chopped onions
2 tbsp chopped tomatoes
2 tbsp chopped carrots
2 tbsp chopped French beans
1 cup chopped cabbage
2-3 button mushrooms finely sliced
2 tbsp chopped coriander leaves
1 clove garlic
1 tbsp tomato ketchup
1 tbsp olive oil
1/2 tsp cumin powder
Salt to taste
Smoked paprika if u wish
Method
- Heat oil in a deep bottom pot and add onions and garlic.
- Cook for 2 minutes till they sweat, add tomatoes and put cumin, paprika & tomato ketchup.
- Add carrots, beans & mushrooms. As mushrooms soften up, add coriander & cabbage & cook for a minute or two.
- Add 1-2 glasses of water & salt and let it boil.
- Serve hot with or without boiled noodles.
