Beetroot & corn rice
Ingredients
1 small beetroot finely chopped
1 small onion sliced
2 tbsp corn kernels boiled
1 cup basmati rice
1 tsp ginger garlic paste
1 tbsp tomato ketchup
1 cup vegetable stock
1 cup water
1 tbsp olive oil
Salt to taste
Method
1) Heat oil in a deep pan and fry onions till they gets soften & turns pink.
2) Add ginger-garlic paste, chopped beetroot, boiled corns & tomato ketchup. Cook it for 2 minutes and add rice grains to this.
3) Sauté it for 5 minutes and add vegetable stock, water & salt to this and cook till the rice is well cooked.
4) Serve sizzling hot.
