Broccoli & Almond Soup
Almond Nutrition:
- Almonds are 13 percent protein.
One ounce (or about 23 almonds) is an excellent source of vitamin E, magnesium, fiber and protein. - Almonds are filled with minerals such as magnesium, copper, potassium, calcium, phosphorus and iron, and also B vitamins.
Broccoli & Almond Soup
Ingredients
1 medium size broccoli
1/2 white onion chopped
3-4 chopped garlic cloves
2 celery chopped
1 tbsp coriander leaves
10-12 blanched & peeled almonds
1 cup coconut milk
1 tbsp butter (optional)
2 tbsp olive oil
Salt & pepper to taste
Method
- Heat oil and butter together in a deep soup pot with some chopped garlic. Let it sweat and add onions and celery. Cook it for a minute or two and add coriander & broccoli with almonds. Add little water n let it boil.
- Switch off the gas and let it cool.
- Blend this mixture to purée. Boil it again in the same pot with coconut milk, salt and pepper.
- Garnish with little more pepper powder or Parmesan Cheese.
- Serve hot with some cold salad or crispy lavas sticks.
