Healthy ratatouille
Ingredients
1/2 Zucchini diced
1/2 carrot diced
1/4 Yellow bell pepper diced
1/2 Aubergine diced
1/2 Onion diced
4-5 cloves Garlic chopped
4-4 Baby tomatoes chopped
2 tbsp fresh or canned Tomato purée
2 tsp red chilli powder
1 tsp cracked black pepper
1 tsp Oregano
1 tsp Basil
Parsley chopped (optional)
1/2 cup cooked Quinoa
Salt to taste
2 tbsp olive oil
1/2 cup vegetable stock
Method
Heat oil in a non stick skillet. Add onions & cook for a minute or two. Add all the remaining vegetables, spices, salt, quinoa and vegetable stock. Cover the pan & cook on a low flame for 15 minutes
Serve hot with parsley & cooked zucchini rollatini.
