Ingredients
-5 slices of flat bread
-1 zucchini finely sliced (if very fresh, no need to peel)
-2 tomatoes, finely sliced
-½ cup red radish finely sliced
-½ red capsicum, finely sliced
-½ yellow capsicum, finely sliced
-2 onions, finely sliced
-2 tbsp mint, finely chopped
Dressing
-1 lemon, juiced
-60 ml(¼ cup) extra virgin olive oil
salt and freshly ground pepper, to taste
-4 tbsp curd, hung for 2 hour
Method
1) Cut the bread slices. Each with 4 pieces & toast it crisp in a deep pan with 1 tbsp of olive oil.
2) As it gets cool, combine all the ingredients with the bread and toss with the dressing.
3) Put a dollop of hung curd on it.
