Quinoa
Quinoa is naturally gluten-free and contains iron, Vitamin B, magnesium, phosphorus, potassium, calcium, vitamin E and fiber. It is one of only a few plant foods that are considered a complete protein and comprised of all pernine essential amino acids.
Quinoa contains almost twice as much fiber as most other grains. Fiber is most widely known to relieve constipation. It also helps to prevent heart disease by reducing high blood pressure and diabetes. Fiber lowers cholesterol and glucose levels, may lower your risk of developing hemorrhoids and may help you to lose weight as it takes a longer time to chew than does other foods because it makes you feel fuller for longer and is less “energy dense” which means it has fewer calories for the same volume of food.
Mushroom & spinach quinoa
Ingredients
1/2 bunch spinach leaves
1 packet button mushrooms sliced
1 cup cooked quinoa
6-8 cloves garlic crushed
1 onion sliced
1 tbsp olive oil
Salt & pepper to taste
Method
Heat oil in a non-stick pan. Cook garlic & onion in oil for 5 minutes or until they soften.
Add mushrooms & put the flame high. Cook for another 5-7 minutes & add spinach. As the spinach wilts, add cooked quinoa. Mix everything well together. Lastly add salt and pepper.
Serve it hot as a replacement of rice or simply relish this dish as a salad.
